Chicken Green Bean Stuffing Casserole

What do you get when you put Chicken, Green Beans and stuffing together in a casserole? Turkey dinner all rolled up into one dish.  Obviously there is no Turkey in this dish, but you can understand the similarity! This dish was really easy to put together.  This is one of the few dishes where I did not have to cook the chicken before putting it into the casserole.  I also substituted the sour cream for Cream of Chicken because I didn't have sour cream. Canning Apple BBQ Sauce

I have wanted to learn how to Can for along time.  Last year, I finally started to learn how to Can with the help of a veteran Canner, my neighbor.  She taught me the necessary basics of Canning and helped me understand the system of canning with a water bath.  Last summer, I conquered Salsa, pickles, pear butter, apple butter and spaghetti sauce.  This year, I decided to try some new Canning recipes and this Apple BBQ sauce seemed very simple and easy to put together.  We use BBQ sauce on a regular basis, so it was an easy choice.  This BBQ sauce is sweet and tangy.  My family really likes the flavor and prefer this over store bought sauce.

Blueberry Streusel Coffee Cake

We recently went to a local Blueberry Farm to pick our own Blueberries.  My son loves blueberries like a normal kid loves candy.  As he was picking blueberries, he would put one in the basket and then one in his mouth.  He was in blueberry heaven.  My husband complains we never have enough blueberries to snack on because my son will eat them all.  My husband also enjoys eating blueberries.  

My motivation was a little different for picking blueberries.  While I enjoy watching my Son pick and enjoy blueberries, I love to bake with them.  When you pick your own blueberries, you get a combination of sweet and sour blueberries.  When you bake with them, they balance each other out in the flavor category. I like to make breakfast  baked goods with blueberries.  Blueberry muffins, blueberry bread, blueberry coffee cakes etc...I found a good looking Blueberry Streusel Coffee Cake recipe that I wanted to try.  

I also found a new way to motivate my husband to do dishes.  After I made this Coffee Cake, he offered to do the morning dishes.  It doesn't get any better then a little motivation! I might have to make this on a regular basis because who doesn't love a little help with dishes!

Cheesesteak Sloppy Joe

There is nothing that makes me fill more like a kid then eating a Sloppy Joe?  I always enjoyed them growing and I still enjoy making them for my family.  I found an interesting twist to the old classic.  No I did not open a can of Manwich and mix it in with ground beef!  This recipe calls for you to make your own Sloppy Joe sauce and add cheese.  Brilliant, right?  The provolone cheese on top just adds extra depth to this recipe.  It's called Cheesesteak Sloppy Joe but it tastes like Sloppy Joes with Cheese on top!  Ride along with me; be a kid again and enjoy this yummy easy recipe!  This recipe also comes from a lady who is known for her $5 dinner recipes!  If you haven't tried one of her recipes, I'd encourage you to check out her recipe collection!  She has a huge collection of money saving recipes.  I'm sure you'll find something you want to try!

Beefy Flatbread Dinner

Sorry, I haven't posted a new recipe in a week or so.  I've been busy with my Son's birthday party last week and getting ready for Valentines Day.  I enjoy card making, so I make their Valentine Cards for school.  I came across this budget friendly and easy meal last week and wanted to give it a try.  It didn't disappoint and everyone really enjoyed it!  The only tip that I would like to pass on is when your making the flatbread, it doesn't take long at all for it to brown.  I think I burned my first two biscuits. Watch them after you drop them in the oil.  They fry up pretty quickly!  I hope you will try this yummy and healthy recipe!

Creamy Chicken Noodle Soup

When it's cold outside, nothing makes me happier then a bowl of soup.  My wonderful husband still argues that soup is not a meal.  But he still eats it and then some more....  One of my favorite soups has to be Chicken Noodle soup.  Last night I made Chicken Noodle Soup with a twist.  I made a creamy version of this soup and it was heavenly.  I don't know if I will ever go back to the normal (noncreamy) version of Chicken Noodle soup because this was so tasty! Granted, heavy whipping cream isn't real healthy, but every once in a while never hurt anyone.  There are a lot of dimensions to this recipe because you have to cook this in that pot and then cook the noodles in a different pot and then you have to make the cream sauce in a different pot.  Be ready to do some extra dishes with this meal.  I promise you, it will be worth the extra dishes! Egg Salad BLT

One of my favorite foods are sandwiches.  I love bagel/egg sandwiches for breakfast and I could eat a sandwich or hoagie of any sort for Lunch and Dinner.  There is just so much you can do with sandwiches because the ingredients are endless.  You can even put the ingredients into a wrap or on flat bread.  I haven't made Egg Salad in a long time, so it was time to use this new recipe.  This was an easy meal that you can make for both lunch or dinner.  Best part, my husband got to take leftover egg salad to lunch today.  I also tried making the bacon a different way as well.  I've always made my bacon on the stove.   I've heard that if you cook bacon in the oven, it cooks more evenly and it doesn't burn.  I tried making the bacon in the oven and it turned out great!  I think from here on out when I need to make bacon for a dish, I will bake it in the oven!  Another first for me was adding Sour Cream to my egg salad dressing.  I've always used mayo and mustard with added spices.  It did add creaminess to the salad dressing!  If you are looking for an easy meal and like sandwiches as much as I, I hope you will give this one a try!
